He was CUTE and SQUISHY

Good Morning,

Well hasn't the cold weather hit all of a sudden and would it be rude of me to say how much I HATE the cold weather.......... I hate layering clothes, i'm already big enough as it is without having to layer an extra 10kg of clothes on.

Today I have an old share for you. It was a Book of You layout from the old Scrapboxx website - now who misses that site???? I know I do that's for sure. The page was created by the always talented Julie Winks who like me has found that life takes over and creativity gets pushed aside. I used my first born in this layout from his 6 month old photo shoot - boy I wish I could go back to those days when he was cute and squishy NOT tall and mouthy :)

Mexican Beef Pie

Good Morning,

And what a great morning it is.....sun is shining, birds are chirping but most importantly the kids are still sleeping ( gotta love school holidays). And how are the school holidays going for everyone? Personally I haven't had a lot of time to spend with the kids as i've been at work and of course hubby has been away at work for the whole holidays as well so the kids haven't been doing much at all......makes them appreciate going to school more I say.


Well I have a great kid friendly recipe to share with you today.
What  kid doesn't love mexican? I can honestly say I haven't found one yet.
This recipe is great for the budding little chef in your life to help you out in the kitchen. Super easy and super yummy Mexican Beef Pie



Ingredients

1 tbs Olive OIl
1 Onion, chopped
500g Beef Mince
140g Tomato Paste
40g Taco Seasoning Mix
400g Can Diced Tomatoes
420g Can Kidney Beans
420g Corn Kernels
Grated Cheese
Tortillas
Corn Chips
Sour Cream

Method

1. Preheat Oven to 180c
2. Heat oil, Saute onion until tender, add mince and cook until browned
3. Stir in tomato paste, seasoning mix and cook 1-2 minutes. Add tomatoes, beans and corn. Reduce heat and simmer for 5-10 minutes
4. Heat tortillas in microwave until soft. Arrange in dish to form a shell. Spray with oil. Bake 10-15 minutes, until golden.
5. Spoon mixture into shells. Sprinkle with cheese. Bake for 4-5 minutes, until cheese melts.
6 Serve topped with corn chips and sour cream

Mixed Media Canvas


Good Morning,

This is my weekend at the moment so I thought I would take the opportunity to do a little dance.....no I mean post :)

Last year I took a little bit of time out to do a class at the Scrap Cottage (you can do online orders from this little shop of yumminess for those of you not lucky enough to live in Toowoomba) because sometimes you just need a little boost to get the mojo flowing. 

Face it, everyone loves mixed media cause its a good opportunity to get messy and dirty and well colourful......for those who have never delved into mixed media a small explanation on what its all about........

Mixed media tends to refer to a work of visual art that combines various traditionally distinct visual art media. For example, a work on canvas that combines paint, ink, and collage could properly be called a "mixed media" work. When creating a painted or photographed work using mixed media it is important to choose the layers carefully and allow enough drying time between the layers to ensure the final work will have structural integrity. 

If you haven't tried it you should cause it's a great way to use up excess supplies etc, this is what I created on the day

I used all sorts of elements that I had in my stash - onion bag, chipboard, flowers etc and even the Fox symbol off an old pair of hubby's riding pants - nothing is junk or unusable, just fun
