The Two Of You

Happy Sunday Everybody,

This layout is one that I completed from the Basic Grey POTM kits. What better way to celebrate love than with an engagement party, my brother in law surprised us with his engagement in 2010, we didn't even know he had a girlfriend - at least that put a few of the 'gay' jokes aside between him and my husband, the kids even asked if they were still allowed to call him "Uncle Poof" - he he.

Ham and Asparagus Quiche

Morning Peeps,

Trust you are all organised for Christmas and 2013. Let's hope we have more than 4 days to live and the world doesn't end on the 21st - but just incase it does I will tell you all I love you now.... he he.
Just a little recipe share today - this quiche is a quick and easy favourite that's popular with my family.



Ingredients

1 3/4cps Plain Flour
1 Egg Yolk
150g Butter
1-2 tbs Water

FILLING

340g Asparagus Spears
1 tbs Oil
1 Clove Garlic
4 Eggs
1 tbs Chives
1 Onion
100g Ham
300ml Cream
3/4cp Grated Cheddar Cheese

TIP: If you are time restricted just used pre made Shortcut Pastry

Method

1. Grease Flan Dish
2. Process flour,butter and egg yolk and enough water to make pastry. Cover and place in refrigerator for 30 minutes
3. Take pastry out of fridge, roll and place in prepared pan. Cook in oven for 10 minutes.

FILLING

1. Heat oil in pan, add onion and garlic,cook until soft. Add ham. Cool. Whisk eggs,cream,chives and cheese.
2. Spread ham mixture over pastry base. Pour egg mix over. Bake in moderate oven for 30 minutes. Garnish with chives

SERVES 4

Mixed Memories

WOW,

Can you believe that is is nearly the end of November?
Where has 2012 gone?
I swear it feels like I have only just bought Christmas presents and here we are again
at that joyous but
expensive time of year.
My humble apologies for being such an absent entity of late but I have been snowed
under with uni and work
and it seems that my children's extracurricular activities list grows every day.

Over at STS this month the theme was to choose a song that reminds you of
something - There are so many
songs to pick from and it really is hard to pinpoint particular songs to everyday
moments.

It really scares me that one day the kids will leave home but I always want
them to remember that no matter how far they travel that they can always
come home.

I have used some fantastic mixed media techniques that I have acquired by purchasing
the subscription to the monthly mixed media kit from Blue Bazaar - it has forced me to
step out of my comfort zone and try something new which scares me most of the time.
This was the mixed media project that I created that inspired me to do the LO

Arancini

I have another recipe share for you all.

The neighbours and us sometimes get together and have themed dinner nights. This particular night we decided to have an Italian night and I made Arancini. Here is the recipe below:



Ingredients

1L (4 Cups) Chicken Stock
1 tbs Olive Oil
1 Brown Onion
2 Garlic Cloves
1 1/2cps Arborio Rice
1/2 cp Shredded Parmesan
4 Eggs
2 cps Breadcrumbs
1 cp Plain Flour
100g Mozzarella, cut into 1.5cm pieces

Method

1. Place the stock in a saucepan, bring to boil. Cover and simmer
2. Heat oil in large saucepan, add onion and garlic and cook until onion is soft
3. Add rice to onion mix, stir and cook until grains appear glassy. Slowly add stock and stir until liquid is completely absorbed and the risotto is creamy. Stir in parmesan. Set aside to cool completely. Add 2 eggs and stir well until combined
4. Place breadcrumbs on a plate. Place flour in a bowl. Lightly whisk eggs in a separate bowl. Shape 2 tsp of risotto into a ball, Make an indent, place a piece of mozzarella in and then mould ball around it. Repeat till all mixture is in balls
5. Roll ball in flour, egg and then breadcrumbs. Place balls in the fridge for 30 min to chill.
6. Heat oil, add balls and cook for 4-5 minutes or until golden brown
7. Serve

MAKES 28 BALLS

Time Plan Hint: Prepare the uncoated balls upto 2 days ahead - store in an airtight container in the fridge.

It was such a tasty little entree, and would suit any theme really.

Movin on Up

 Hi Peeps,

So free choice for this month over at Scrap That Song............it was so hard to pick a song when there are so many great ones out there.

I eventually went back a few (maybe more) years back to my teenage years and picked the song "Movin on up" by MPeople



I used a pic of my DD with her teacher in Grade 2 - she didnt want to leave and goto Grade 3 cause she loved her teacher so much and I remember saying to her 'Honey we all had to leave and move up to the next grade, I am sure you will get another nice teacher' - cute isnt it?

Kid's Nachos

Hi Peeps,

I thought I would do a little recipe share today.
This is great recipe for the little one's in your life. Alecia really enjoyed it at daycare and asked if I could make it at home so I got the recipe off them and voila.............  Kid's Nachos



Ingredients

400g Tin Diced Tomatoes
30g pkt Taco Seasoning
400g Kidney Beans
500g Minced Beef
1-2 Rashes Bacon, diced
1 bag Corn Chips
250g Macaroni
1 cp Tasty Cheese, grated

Method

1. In a bowl cook water and pasta
2. Brown the mince, add tomatoes, spices and beans and diced bacon and let it cook through
3. In an oven proof dish drain and place the pasta layer over the mince then add a layer of corn chips and then a layer of cheese
4. Bake in the oven for 15-20 minutes at 200c

It fed the 6 of us here with a bit left over so it's a great option for the bigger family

Back In Black

Hi Peeps,

ROCK can be classified in so many ways and what you determine as ROCK can
 be different to what someone else thinks it is. That what makes this month's theme
 so versatile. I have chosen the aussie icons ACDC. I went to their Black Ice concert 
in Sydney in 2010 and it was amazing - they are just legends. This was the 2nd time 
that I had seen them in concert. The first time I was about 16 or 17 years old and I 
ended up going backstage and meeting the band. For those of you who have met me
 IRL and know how short I am would you believe that Angus Young was only shoulder
 height on me.......he he, I could not believe it either.

Back in Time

Hi Peeps,
Unfortunately due to a tight university schedule this month and exams I wasnt able to get an example layout done for the current theme this month at Scrap That Song which is...........



Yep you guessed it.........the good ole 80's
Are you inspired? 

Maybe I can help you out a bit............let's jump in the time machine and check it out


Can you remember the big hair, ruffle skirts, hoop earrings, coloured sunglasses, bright bold fashion, leg warmers? Oh and don't forget the lacey gloves....you only wore one didn't you?

And what about the music?

And for good measure this was MOI in the 80's with my brother



But if I was me now in the 80's I would probably have looked like this........




He he he - that is super scary

Clinical A

Hi Girls,

It was my turn to do an uplift for May on the BOXX and I apologise sincerely for not posting until......June :0
I have had this project on the back burner for a while but unfortunately my life tends to get in the way of my scrapping.

I picked a layout in the gallery over at the Boxx a while back and I can't think of anyone better to uplift than the wonderfully talented Leeann Pearce  - I am a big fan of her style and also of her Etsy shop The Chip Chop Shop. If you haven't checked out her blog or her shop I highly recommend that you head over for a sneek peek.
