Funhouse

Happy HOT SCORCHING Sunday Everyone,

Hope you all had a very merry christmas and will bring in the new year with love, happiness and a positive outlook. I have a share for you all today, I have had this PP sitting around for ages waiting to get the time to do this LO ( I think it has taken me about 4 years ) - oh well better late than never hey??

I went to the P!NK Funhouse concert back in 2009 - gosh if you all know me well you would know how much I love P!NK and everything that her and her music stands for. Here is my LO:

Tuscan Garlic Chicken

Good Morning Peeps,

Today I am sharing an absolutely delicious recipe called Tuscan Garlic Chicken that I found on Pintrest and adapted from Mel's Kitchen Cafe, it is wholesome, heartwarming, amazing, gut filling, tastebud tickling awesomeness.



  • Ingredients
  • 3/4 cup flour
  • 1/2 tablespoon salt
  • 1 teaspoon pepper
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 6 chicken thigh fillets
  • 5 tablespoons olive oil, divided
  • 1 tablespoon finely minced garlic (about 4-5 cloves)
  • 1 red capsicum, cut into thin strips or chopped
  • 1/2 cup chicken stock
  • 500g fresh spinach
  • 1/2 cup cream
  • 2 teaspoons Cornflour
  • 1 cup lowfat milk
  • 1 cup freshly grated Parmesan cheese
  • 1 pkt 500g fettuccine

  • Method
  • 1. Preheat the oven to180c
  • 2. Combine the flour, salt, pepper, basil and oregano. Dip each chicken piece in the flour mixture, coat well.
  • 3. Heat 3 tbs of the olive oil over medium heat.Place the chicken breasts in the pan, cooking until they are golden and browned, remove and bake in the preheated oven for about 15 min, until the chicken is cooked through. Set aside.
  • 4. Cook fettucine
  • 5. Wipe out and return pan to medium heat,adding 2 tbs olive oil, garlic and capsicum,sauteing for 2-3 min.
  • 6. Stir in one tbs flour. Add the stock and bring the to a low simmer, whisking constantly, until slightly thickened. Whisk together the cornflour and cream. Add the spinach, milk and cream mixture to the pan. Bring the mixture to a simmer and cook, stirring occasionally, until the spinach is wilted and sauce is slightly thickened. Stir in the Parmesan cheese.
  • 7. Place pasta on each plate. Top with chicken breast and spoon sauce over the top.

If you have a craving for tender chicken, hearty pasta and an unbelievably tasty creamy Parmesan sauce, this is the meal for you.

Flourless Peanut Butter Cookies

Happy Horrible Monday to you all,

Well that's how I feel today - so what better way to make myself feel better than by baking the absolute most yummiest and tastiest cookies ever on the planet. Seriously these are so unbelievably easy and so super tasty and what makes them even better is the fact that they are flourless.



Ingredients

1 cp Chocolate Chips
1 Egg
1 tsp Baking Powder
1/2 tsp Vanilla Extract
1 cp Sugar
1 cp Peanut Butter

Method

1. In a mixing bowl, use electric beater to beat together egg, sugar, baking powder and vanilla for about a minute.
2. Add peanut butter and , if needed, a tsp water, beat together
3. Add in chocolate chips and mixing well with a spoon
4. Measure out heaped teaspoons onto a lined cookie tray.
5. Bake for 15min at 160c fan forced or 180c no fan
6. Cookies are ready when they feel firm and are slightly brown



So get your Betty Crocker on and enjoy one of these amazing cookies with a nice cuppa - it made me feel better that's for sure

@ 1 Month in* MY CRAZY* life.com

Happy Sunday,

And what a glorious sunday it is today, hope you all enjoy it.
Just a little share for a sunday, I created the challenges for our local scrap group and one of my challenges was to do a photo a day for the month ( cause that seems to be one of the things to do these days), everyone baulked at the idea but some of the girls came through with the goods.

Maybe you should give it a go - it was fun to do and before I knew it I had a completed double page ( cause I love double page LO's). It was a real accomplishment for me to just stick things down without a plan.

An APPLE a Day........

Morning,

What a fantastic Thursday it is......... hope you have all woken up with a spring in your step ready to embrace the amazing.
Speaking of amazing, I have always admired the creative genius of Stacey Young - her scrap work is to die for ( I really have no words to explain really). Well anyway I got super excited when she put a step by step up on her blog so I took it as the perfect opportunity to get inside her brain.
This came at the perfect time because we had a challenge with our local scrap group to design a layout that incorporated your APPLE name into it ( We are Toowoomba ScrapApples and my APPLE name is bappleicious). And this ladies and gents is my layout -

It just goes to prove that everyone has BAD days

Finally used a vine that has been in my stash for 2 years :)

Pork and Prawn Fried Rice

Happy Sunday,

It's always nice to have fried rice for dinner but sometimes just the basic 'normal' fried rice can get a bit boring. This recipe puts a nice spin on the boring.



Ingredients

1/2 cp Peanut Oil
6 Eggs, Lightly Beaten
650g Pork Mince
4 Cloves Garlic, crushed
500g Raw Prawns, Peeled
2 Celery Stalks, chopped
3 Spring Onions, chopped
2 pkts Pre-cooked Long Grain Fried Rice
3/4 cp Oyster Sauce
3/4 cp Water

Method

1. Heat 1tsp oil in wok or large frying pan. Add egg. cook for 1-2 minutes.Remove and then slice up.
2. Heat remaining oil. Stir fry the mince, add garlic and ginger. Transfer to plate once cooked. Add prawns to heat, cook, return mince to pan, add celery and spring onions
3. Add rice and stir till heated through. Combine the oyster sauce and water in a bowl, add o rice and stir to combine.
4. Serve

She Knew.........

Morning,

I have been doing Mixed Media Canvases from Blue Bazaar to help broaden my technique knowledge. I try to not do them exactly the same, I am all about adding my own touch to things. Luise and the team really do put together a great variety of products for you to use which is fantastic cause they are items that I would never think to use myself :)

Cabanossi and Corn Impossible Quiche

Happy Saturday,

Even though it is a miserable one ( I'm in my uggboots again so i'm not happy :( ). This recipe was a hit with the family - except for the fussy 4 year old who hates everything except spaghetti and meatballs. Really easy to prepare and very tasty.




Ingredients

2 cps Milk
4 Eggs
90g Butter, melted
1/2 cp Plain Flour
1 cp Tasty Cheese, grated
1 stick Cabanossi, sliced
125g Creamed Corn
2 tbs Parsley
2 tbs Chives

Method

1. Preheat oven to 180c
2. Lightly grease pie plate
3. Whisk milk,eggs and butter together
4. Sift flour into a bowl, make a well in the centre. Gradually mix in milk mixture
5. Add half the cheese, then cabanossi, corn, parsley and chives. Season to taste
6. Spoon mixture into pie plate. Sprinkle with remaining cheese.
7. Bake for 45-50 minutes. Cool 10 minutes
8. Serve with salad

SERVES 4-6

TIP: This freezes well, whole or in wedges

Gluten and Grain Free Carrot and Coconut Breakfast Loaf

Happy Tuesday,

I have another recipe share for you today that is absolutely amazing. Perfect for you busy Mum's on the go who tend to forget to have breakfast ( I am the guiltiest for that). I found the recipe via Anja's Food 4 Thought 

It is Gluten and Grain free


Ingredients

3/4 cup almond meal

1 teaspoon baking powder
1/2 teaspoon ground cinnamon
2 eggs
1/2 teaspoon vanilla extract
4 tablespoons coconut oil
1/2 cup mashed bananas (2 very ripe medium bananas)
1/2 cup dates, pitted and chopped
1/2 cup carrots, coarsely grated
1/4 cup desiccated (very finely shredded) coconut
1/4 cup pistachios, roughly chopped
1/4 cup cranberries


Method

1. Preheat oven to 180c. Grease or line a loaf tin with baking paper
2. In a bowl combine almond meal, baking powder and cinnamon. Set aside
3. In another bowl whisk the eggs. Stir in vanilla, coconut oil and mashed bananas. Combine wet and dry ingredients.
4. Fold in dates, carrot,coconut,cranberry and pistachios
5. Transfer to prepared loaf tin
6. Bake for 40 minutes.

Give it a go because it is absolutely amazing - you will not regret it.

Slow Cooked Chicken and Broccoli

Happy Saturday,

I have a recipe share for you today. If you are a slow cooker fan then you are gunna love it. I got the original recipe off pintrest but tweaked it a la BB style and now its freakin amazing.



Ingredients

6 Thigh Fillets of Chicken
1 can Cream of Chicken Soup
1 1/2cps Chicken Stock
1 tsp Salt
1/4 tsp Garlic Powder
2 cps Broccoli
250g Philadelphia Cream Cheese

2 cps Brown Rice for serving

Method

1. Place all ingredients except for Broccoli and Brown Rice into Slow Cooker
2. Cook for recommended time on low 
3. Cook rice according to packet directions before ready to serve
4. Once rice is cooking place broccoli into slow cooker
5. Once broccoli is cooked to liking serve on the brown rice

I can feed my family of 6 quite sufficently on this amount.

Well we are mid month already and honestly I feel like it's only the beginning of the month because I have been so busy.
So before the month ends I need to let you all know about this month's challenge at Archi-Scraps before the month is over.

Double Decker

New Month........New Challenge

Happy Rainy Sunday,

Are you all over the wet weather yet? Maybe I can inspire you to get creative on this miserable day.
Over at Archi-scraps we have a new challenge for March.

Here is the photo for March's challenge - 



Some say it is a hobbit house, some think fairytales.  Our theme this month is ...   FAIRYTALES

There are many to choose from and it doesn't matter how obscure. 

Most fairytales have been handed down by oral history and as such you sometimes find different endings.

I would love to see what you can do with this.

Here is my LO - 


I found the inspiration from the yellow flowers at the front of the cottage. My daughter loves to plant sunflowers once a year and she always calls it her "PRINCESS" Garden.

Fontana Di Trevi

Good Afternoon Peeps,

I have the pleasure in announcing that I have been selected to be one of the DT members at Archiscraps, this is very exciting and an interesting concept to be involved in.

I totally took my inspiration from the mosaic effect and the fact that it is a fountain.

Texas Barbecued Meatballs

This would have to be one of the yummiest recipes eva.

One of my gorgeous friends made it for me a few years ago and I finally decided to make it myself.
It was an absolute hit with everyone and I have already been asked to make it again


Here is the recipe:-


Ingredients

1kg Minced Beef
375mls Evaporated Milk
1cp Uncooked Oats
1cp Crushed Saos
2 Eggs
1/2 Onion, chopped
1/2 tsp Garlic Powder
2 tsp Salt
1/2 tsp Pepper
2 tsp Chilli Powder

SAUCE
1 cp Tomato Sauce
1 cp Smoky BBQ Sauce
1 cp Brown Suger
1 tsp Garlic Powder
1/2 cp Onion, chopped

Method

1. In a large bowl combine mince, evaporated milk, oats, saos, egg, onion, garlic powder, salt, pepper and chilli powder. Mix well.
2. Shape into meatballs of desired size and chill for about 30 min
3. Bake on a flat tray at 180c for 30 min. Place meatballs in a baking dish
4. In a bowl stir together ketchup, smoky BBQ sauce, brown sugar, garlic powder and onion. Pour over meatballs and bake for 40 min.
