52 Weeks of Gratitude - Week 9

52 WEEKS OF GRATITUDE

WEEK 9 - HOW DID YOU DO AND FEEL?

I'm not really understanding what is being asked in reference to "How did you do and feel" so i'm just going to go with what makes me  feel good.........
I can't really narrow things down too much because there are a lot of things that I rely on to boost my spirits however I think there is nothing funnier than reading something on social media that is truthful and relates to oneself. Let's go with .......

1. The Everyday Life Of A Mother

2. On Being "The Mother"

3. On being "ME"

4. 1st World Problems

However: If I ever got to park in my garage we may not have this problem :)
And one last one for good luck -

5. On Adulthood

There is nothing like your "truth" smacking you in the face, the best thing about it is that you can have a good laugh at the way you are, the way you act and what life throws at you.

52 Weeks of Gratitude - Week 8

52 WEEKS OF GRATITUDE

WEEK 8 - EXPRESS GRATITUDE TO 3 PPL

There are lots of people that I have come across in my life that I could express gratitude towards but if we are referring to the here then it would have to be my husband - he has so much love and patience and really doesn't deserve to put up with me well ..... being 'this' person that I have been for a while now, Partner's sometimes really do put up with a lot of crap don't they? Why do we push away our partners?

I can honestly say that it is the loneliest I have ever felt in my life when it comes to friendships - life is so busy that the quality time to spend with people other than my husband and kids does not exist. I do not feel like the sort of person that anyone would like to just hang out with anyway, I always feel like the "forgotten" friend, the one who holds a friendship on a higher pedestal than the other, the one who never gets invited anywhere and wouldn't see anyone if I didn't organise things. Mate-ship seems to evolve around me, I can't even pick up the phone anymore to talk to anyone with the fear of them not answering because they don't want to talk to me and I take offence when a text gets sent and not replied too even though I know phone companies are sometimes to blame.

I know things go both ways and possibly it is my fault but i'm exhausted - running a household and working full-time is tough, the only thing I do for myself on a day to day basis is goto the gym (sad I know)but it gives me the energy to keep going and I spend my days off catching up on all the housework and cleaning up, for some reason I get the attack of the guilts if I go anywhere and neglect the house duties that no one else does - is this normal? I never used to be like this and i don't know how things have changed so much - is it just getting older that sucks?

I don't know - how do you find the perfect balance in life between Family, Work and Life without something getting neglected?

Maybe everyone else is in the same position and feeling exactly the same - who knows

Adulting is so complicated sometimes but I am truly thankful for every single person who has come into my life in some way or another

52 Weeks of Gratitude - Week 7

52 WEEKS OF GRATITUDE

WEEK 7 - A FRIEND

2014 - With our teenage selves
I have been lucky enough to have had a friend since 1990 ( Yes, 26 years ), we have had good times, never any bad times, lost contact, found each other again and picked up like we only spoke to each other yesterday. She was my go - to, my fun bag, someone who was just as idiotic as ME. There was never any judgment between us and our friendship is just as good now as it was then.

1990
1991
1992 - At my 16th Birthday Party
1998 - At the Trevi fountain in Italy - love you too Wendy
1999 - Godmother to my first born Lachlan with my brothers and another great friend Susan
2001 - Man we had style
2004
2008
2011
2013 - At our 20yr School reunion with our equally just as gorgeous friend Kayleen who we
have know for nearly just as long

And lucky last - in 2015 I went to visit her after the birth of her 7th child little Leah Michelle

"GOOD FRIENDS ARE LIKE STARS - YOU DON'T ALWAYS SEE THEM BUT YOU KNOW THEY'RE ALWAYS THERE"

Love your guts Kirralea and I am a better person for knowing you

52 Weeks Of Gratitude - Week 6

52 WEEKS OF GRATITUDE

WEEK 6 - THE CITY YOU LIVE

Toowoomba  or 'The Garden City' which is what it is commonly known as is a city in the Darling Downs region of Queensland. It is located 125 km west of Brisbane by road.
The estimated population of Toowoomba as of 2016 is 165,168 and what I find interesting is that I think the population was only 90,000 when we first moved up here in 1999.
A university and cathedral city, that hosts the Toowoomba Carnival of Flowers each September and national championship events for the sports of mountain biking and motocross.
There are more than 150 public parks and gardens in Toowoomba.
It has developed into a regional centre for business and government services. It is also referred to as the capital of the Darling Downs.
It is the 16th largest city in Australia and the 6th largest in Queensland.
Toowoomba is the most populous inland city in the country after the national capital, Canberra.

Thank you Wikipedia - ha ha

Now what do I think???? Honestly I love Toowoomba, it is the place that my little family started and it will always be my "other" home. I am forever thankful for growing up in Sydney when I did, I would hate for my kids to be growing up there now, great to go an visit but that's about it. My kids get the country life with the city conveniences - as much as they whinge to me cause they live 10km out of town I am hoping one day they will appreciate it.
It seems that a lot of kids who grow up here can't wait to leave and explore the big cities. A lot of people say that they hate Toowoomba but you know what...it doesn't matter where you go if you have a stinky attitude then life will be stinky, it's not the place you live in IT'S YOU

41 things you’d only know if you grew up in Toowoomba - Cosmopolitan 2015

OR as Holly would say "Cosmotopolin".......he he

1. Your parents would advise you to avoid Garden Town's (previously Village Fair) bus stop. Because, questionable characters.

2. Blue light disco's at PCYC were the ONLY thing on your social calendar and you begged your parent's to let you go

3. You'd never go to the cinemas at The Strand, even if they were showing better movies than 'Grandy" because the arm rests don't go up. priorities, people. *Yawn reach*

4. Chalk drive was always a no-go zone, unless you could skate and had a packet of Winnie Blues.

5. You'd complain about all the tourists in town during Easterfest, but you'd go anyway.

6. Brisbane is only a city of two million, but to Toowoomba folk it seems like a huge city of glamour and opportunity. It's basically NYC.

7. It's the second most populous inland city in Australia (second to Canberra), so you aggressively correct anyone who refers to it as a country town.

8. It's Sacrilege if you don't make up a fake name for the "Nitelife" section in the local paper, The Chronicle.

9. You can call it Woombie, T-Bar, or Poo-woomba and the locals know exactly what you're talking about.

10. If you're over the age of 40, you won't drive from one side of the city to the other because it takes too long (approximately 20 minutes).

11. It's Sunday every day on the roads in Toowoomba. Saaaaar sloooooow.

12. It's got the most schools per capita in Australia (probably), but all students are united in their hate for Toowoomba Grammar School.

13. That's Harlaxton, don't go there.

14. Rumours used to be the hottest ticket in town, and before that it was the Powerhouse.

15. City Beach staff thought they were THE SH*T working at a store 300km (approx) from the beach.

16. Everyone goes to the annual Toowoomba Grammar School vs. Downlands rugby union match or else, social suicide.

17. You couldn't wait to turn 18 so you could head to the Weetwood Races (where you were so busy -sOcIaLiSiNg- you wouldn't even see a horse).

18 'The Fed' has arguably the best value pub meal in Australia. $9.90 gets you a huge schnitty and bacon burger, pile of chips and cold schooner *Fist Pump* (Disclaimer: this meal deal may no longer be in existence. And that's heartbreaking).

19. The iconic Picnic Point waterfall lacks flow.

20. You always wanted to roll on the Margaret St mansion's manicured lawn after a night out at Fitzy's, but alas there's a tall fence.

21. On that note, you were BEYOND excited when Fitzy's underwent a serious reno, which included a cool new beer garden. Beer gardens FTW!

22. All the 'cool' girls would take their Country Road tote bag everywhere.

23. As soon as you got your driver's license....Thursday Night Lapping!

24. AND of course a trip through the Margaret Street Macca's Drive-Thru.

25. You'd always ask your parents about the 'pig house' in all it's pink glory

26. Schools are divided into two categories, those who have Canterbury-branded senior jerseys and those who don't. *Collar Pop*

27. The Cube's flashing lights dance floor and cool swinging chairs were the most novel thing. EVER.

28. You've spent an ambitious Sunday morning climbing Table Top Mountain only to reach the top and discover NOTHING.

29. You'd goto 'Tattersalls Hotel' on a Saturday night to relive the 80's, 90's and early 00's. yeeAAAH throwback.

30. And after the Tat's Hotel, "LET"S GO TO TOMBA'S!" (now Agenda Nightclub), where you'd finish the night.

31. You probably experienced serious hay fever during the Carnival of Flowers at least once. But you'd still go 'miring those floats. SOOO pretty.

32. You were always so stoked when bands would actually include T-Bar on their tour and play at the Empire Theatre.

33. You's dread swimming carnivals at Milne Bay because of the questionable water in the kiddie's pool.

34. Making it up the Toowoomba Range (AKA Australia's windiest, steepest road - probably) for the first time was a HUGE achievement. #Lifegoals

35. You remember hearing people say the city at the top of the hill would never flood. And then it did. And it was devastating. Mother Nature, please explain.

36. When Cold Rock opened you finally had a new date night option.

37. Once you're old enough and had proven your maturity, your 'rents would let you dine at Sizzler with your friends. Where you'd be immature and create OTT soft drink concoctions. And disgrace yourself at the buffet, of course. YOLO.

38. On that note, you're thrilled that only ONE Pizza Hut buffet still stands in the country - in Toowoomba.

39. Those westerly winds were absolutely cray cray and really put your winter knits to the test (quite often creating a -16 degree chill factor).

40. Skate City was the ultimate party destination.

41. If you’ve moved away, you’re always pleased to come home, because it really is ~StUnNiNg~

And Just to add to the list.........

42. Toowoomba people seriously "DO YOU KNOW HOW TO USE A ROUNDABOUT?"

43. Prior to having a driver's license you would lap Grandy constantly for 6 hours - affectionately known as a Downtown Rat (Thanks Lochie)

I would love to hear if you have anything to add to my list

Thai Green Curry - YIAH Style

Good Afternoon,

Seriously this would have to be the easiest dinner ever for time poor families....

YIAH (Your Inspiration at Home) makes it so easy to make a delicious curry

For this dish I have used the Thai Green Curry Dip Mix - which contains rich, lively Thai flavours and is perfect for chicken and even seafood

3 Simple Ingredients paired with Intense Garlic Extra Virgin Olive Oil and Thai Green Curry Dip Mix

I usually dice and then brown my chicken in the pan with the EVOO, then I add the amount of spice I like ( for my family it's usually 2-3 tablespoons), I then add the capsicum diced and let it all cook through - be mindful that the true intensity of the spice flavour will not come out for at least 30 minutes. Just before serving I add the cream and serve on a bed of brown rice - TASTY...........

You can get the Thai Green Curry and the Intense Garlic delivered straight to your door by clicking on  the link below

52 Weeks of Gratitude - Week 5

52 WEEKS OF GRATITUDE - WEEK 5

SOMETHING SOMEONE GAVE YOU

In February this year I had the pleasure of turning 40, for those of you who know me well you would know that it was really hard for me to accept this milestone. I had the grandest plans to have a Rocky Horror themed party with a photo booth and the best cake ever invented....BUT....when it came down to the crunch I couldn't bring myself to organise it, depressed and anxious were the feeling's it was bringing, the more I thought about celebrating ME the sicker I felt. To be honest I don't hold myself in very high regards and the reality of spending money on myself made me feel physically sick.
Just to keep everyone happy I ended up just having an "Open House"........

Everyone was invited just to pop in over the weekend, say HI and drink with me in my sorrows. The ones who love me made an effort and the ones who didn't....oh well you missed a good time ..... BUT anyway back on track, let's talk about the best gift ever......

I don't know whether my husband got the guilts for not being able to spend this birthday with me or what...i'm thinking more just because he's an amazing person and has absolutely no filter when it comes to money....yep and because i'm amazing and deserve it  - ha ha.

Drum Roll Please............

HE BOUGHT ME A PHONE BOX

You may think - why?? but you know what we all have our quirky little obsessions and thats what makes us all individuals.
I'd love to know what your little quirky obsession is - please leave me a comment
But for now........

I'm So Excited
Love you forever Adam Lowe XX
Hopefully being 40 stays this exciting

Avocado Chocolate Mousse - YIAH Style

Good Morning.........

Fresh is best they say................

In the case of this recipe you have to eat it there and then or it's not real flash the next day

I was looking in the cupboard one night and going - what the jeepers can I make, then I came across a thought - I had some avocado and I had seen some paleo stuff pop up every now and then on my pintrest about Avocado Chocolate Mousse, I had YIAH Chocolate Powder......I didn't have anything else according to the recipes but I did have Sweetened Condensed Milk and i thought to myself .......Meh, what have I got to loose?? It can only taste like poop.

So I did it.........I mixed avocado, YIAH Chocolate Powder and Sweetened Condensed Milk

One of the other ways I found online to make it afterwards to see if there was anything I could have done different is just as simple: 1 Avocado, 1 tbsp Cacao, 2 tbsp Maple Syrup - you can substitute any of the YIAH chocolate powders for cacao if you wanted a bit of a different flavour.

After it was made I used the Rose White Chocolate and Pistachio and sprinkled it on the cream that I placed a dollop of on top of the mousse, Serve it up in a wine glass just to make it look a wee bit fancy..........

You can order any of these products straight to your door by clicking HERE

RRP $12.95

Rose White Chocolate and Pistachio Dukkah RRP $18.95
Give it a go.......you may be surprised

Leave me a comment if you stop by ........ if you have any variations to the recipe I would love to know as well

Thought for the Day -

Till next time

52 Weeks Of Gratitude - Week 4

52 WEEKS OF GRATITUDE

WEEK 4 - A FAMILY MEMBER

There is one member of my family who I miss so dearly everyday and that is my Nanna
(Marjorie), she was like a mother to me and honestly she was one of the nicest ladies that ever existed in the whole entire world. I've always aspired to be like her, she lived for her family and would have done anything for them.

These are her own words about her life that she wrote in 1993 -

"I was born in 1912 at Leichhardt. Mother had 7 babies at home with a midwife. Her name is on all the birth certificates. We lived in two different places in Leichhardt.
I would like to have my horoscope chart done, but i don't know my time of birth. It was in the evening because my brothers say it's the only time they were allowed to go out and play in the street after dark - because I was being born in the house. I had Belinda's Chart done. I leave the radio on all night and listen to a midnight show where people wrote in and want to find a man or a woman, or find out about something - and I heard about horoscopes on this show; so I sent in and got Belinda's done. Some things come true with them - like Belinda having two homes. She lived with her mother, and stayed with her father sometimes.
We moved to Narrabeen when I was 11. Before that I went to Orange Grove School. My sister and I used to go to the reunions every year. When they had their 100th anniversary, we saw all the old rolls, and saw our names on the enrolment. Whenever there was an anniversary or reunion, the kids used to put on a show. It's surprising when you mention it, how many people know about Orange Grove.
The schools then were run on English ideas, and you were promoted halfway through the year. We went to Narrabeen when I was in 6th class. Narrabeen was very different - just a teacher and a headmaster. I got a medal for being DUX of the school when I was 12.
After 6th class, I went to Manly Domestic Science school. I passed the exams to go to Cleveland Street - I would have had to get busses and ferries and trains there in 1924. But I had whooping cough, and I couldn't go straight back to school. Mum asked me what I wanted to do and I said Shorthand and typing, so I went to Manly Domestic Science. I had to leave school at Manly at 15:00 to get the 15:10 tram to get back to Narrabeen.
I remember spending quite a bit of time sitting in the sun at school because I used to get terrible coughing fits. I left school when I was 15 to goto Business College at Manly. We had 9 subjects for the exams and I only failed Geography. I know why I hate Geography - because I hate travelling.
I got an A in History and English, and I remember the Art mistresses name - Miss Paully - I couldn't draw a thing. They used to put the exam results in the herald had to do cooking and sewing. I don't know why they don't still have domestic science schools. My Diane would've been better to do that. She wanted to leave school the day she was 14 and 10 months - so why would she need to study science? It was so silly.
I hate cooking - the cooking teachers were always cranky devils. I told my husband Joe I couldn't cook when we were married. He said he would teach me, but he didn't - he cooked himself.
He'd come home from work at midday, and we'd go shopping to the butcher and the greengrocer, then pick up the girls from school later. We always had either steak or chops, we hardly ever had chicken even though we had chooks. But Joe wouldn't chop their heads off. He'd give them to the man next door. And the we'd go and buy our chicken from the shop. Joe was very gentle - he wouldn't tread on an ant. Big men are often gentle.
He wouldn't smack the girls. We had spoiled girls - but his whole family were spoilers.
When I was 15 I got a job for a couple of weeks as a temp in York Street. After that I went back to college. I looked very young when I was applying for jobs, so mum told me to put my age to 16, so I did.
I think that short hand typing was interesting because you could see what was going in and out of the office.
But in the 1930's there were really no jobs about.
My sister's boyfriend - a man he was - was a cabinet maker. Just when Winslow House was built in Angel place, he was doing the fittings there. He asked if they wanted any girls to work in the office. So I got a job in a small debt collector's company. They wound that company up, and became an accounting company.
It was a bad time for the accountant to be starting his business. then they started working for the bankruptcy court. He was a good boss. I was with him for 17 years.
When I said I was leaving to get married, he said I could still work there after I was married.
After Joe and I were married, Joe took his discharge from the navy. I went back to work for a couple of months. Then we got a job as caretakers in a block of flats in New South Head Rd in Double Bay, opposite Cranbrook. My boss was upset when I left work. He had trouble finding someone else to run the office.
There was another woman who sublet an office from Charlie, and other people used to sublet, but he did't think they were any good at running the office. They didn't think I would get married. We were a happy office - I liked my working life.
I was 33 when I got married and Joe was 35.
I had had other boyfriends. There was a boy next door when I was younger that I kept on a string, and I had another boyfriend who used to play competition tennis. The boy next door asked me to marry him and move interstate with his work, but I didn't want to do either.
I used to have a boyfriend from Five Dock - a bank clerk - who used to come over to Manly where I shared a flat with a girlfriend. I discovered that his mother used to open his mail and read it. You wouldn't want a mother-in-law like that, so I sacked him. We used to go upto the Blue Mountains a lot. I always did the booking. One weekend he said that he would do the booking. When the letter said that there would be shared rooms. The girls shared with the girls and the boys always shared with the boys. But she thought that he and I were sharing a room - and he didn't even put her right about it. So i got rid of him.
I met Joe on 21st March, 1942. He was on leave from the Canberra, which was sunk while he was on leave. He was up at Katoomba at the Sans Souci where I used to go every year. He was up there with a friend and his wife.
My girlfriend and I used to check out the talent up there but I wasn't interested in Joe at first because I had a friend overseas in the war. Joe got his friend's wife to get friendly with my friend Peg. One morning before breakfast, Peg said to go for a early morning walk. This was unusual as she usually didn't want to go. I realised later it was a setup as we ran into Joe and his two friends as they were coming in the gate - Peg was in on it. We all had breakfast together, then on Saturday night we went to a party. I went to the pub with Joe in the afternoon. A friend's mother had told me that if I was in a pub and didn't know what to order to ask for a Pimms. Joe nearly died when I asked for one - he never let me forget ordering like I knew what I was doing.
At the party on Saturday night, they asked me to sing. Joe sat me on his lap and I sat evil. he tried to take me to his room but i said NO. I said I would let him kiss me goodnight. We had a lot of fun as friends. Then his leave was up. We put him on the tram and I gave him the office phone number. The following Friday he rand and asked if he could see me on the weekend. I have read in books about people's hearts turning and beating fast, and it was happening to me when I was talking to him on the phone.

How cute is that? I know the timeline is a bit all over the place but that is how she was in 1993 - below is a picture of her and her beloved Joe

She was the first love of my life and one of the happiest memories of my childhood

https://secure4.office2office.com/signup/process.asp?cl=yih&fid=288&ID=21080501

Just for today though I have a recipe to share with you to make your own butter YIAH style, I have used the Herb and Garlic Dip Mix but you are only limited by your own imagination as to what flavour you use in your butter. I have used my Bellini but if you have a Thermomix you can use that or just whip it up the old fashioned way.

INGREDIENTS

600ml Cream
1.5L Cold or Very Cold Water
250-300ml Olive Oil
1 1/2 tsp Salt
YIAH Spice of your choice

METHOD

1. Attach mixing tool firmly to the top of the stirring blade in the jug. Poor the cream into the jug.

2. Mix on SPEED 4 for 2-3 minutes. You will hear it start to bump and vibrate when the butter has come together - turn it off at this point

3. Strain off the buttermilk by pouring the white liquid from the jug through the cooking basket and into a separate jug. To get all the buttermilk out, press the butter firmly against the side of the jug with a wooden spoon

4. Take the mixing tool out of the bowl. Add about 500ml ice cold water. Mix on Speed 4 for 8 seconds

5. Strain off the water again, pressing hard to remove as much liquid from the butter as possible

6. Add another 500ml water, mix on Speed 4 for 8 seconds then strain off the water again. The water should be running clear at the end of this process

7. Weigh your butter. You want a ratio of 2 parts butter:1 part oil:1 part water. Add salt. Click the mixing tool on to the top of the blade again

8. Mix on Speed 4 for 40 seconds or until it looks smooth and creamy

9. Spoon your butter into a container. Refrigerate

I hope you get the opportunity to check out the catalogue here

52 Weeks Of Gratitude - Week 3

52 WEEKS OF GRATITUDE

WEEK 3 - FAMILY

This is a topic that brings up a lot of emotion for me because let's be honest.....family can be some of the cruelest yet the  nicest people you will ever encounter in your life.

I'm pretty sure that I can speak for everyone in saying -

"You would never speak to a friend the way you speak to your family"
"You would not pick your family as friends"

The gratification and respect that we seek from our family is ridiculous

I've observed that sometimes life can be a competition between each other

Hanging out together can be viewed as a chore for the day, for some i've observed that its an obligation to spend time time with family and it frustrates the shit out of me.

Why do we hurt each other?

One of the worst things is when you see your own children getting hurt by the actions of your family members, these actions cut the deepest because you think to yourself - WHY?

I know I have plenty of family but have never really felt like I fit in one way or the other - there is one side of the family with their children, the other side of the family with their children and then there is me - i've always looked after myself because i've never really felt like I can rely on anyone else but me, I never want to be seen as a burden to anyone - I even hate my husband and kids doing things for me.

I know people who have wonderful caring family units who support each other and this is what I am now trying to install in my children so they don't grow up hurting and disrespecting each other unintentionally, I want them to feel supported and be there for each other when needed and I want them to know that they have each other to fall back on.

Don't get me wrong I love my family but sometimes I just wish things were different

I look at families and see them as an experiment - let's put a bunch of completely different personalities together in one room and watch it all unravel.............

I'd love to hear what dynamics work for you as a family

Till Week 4....

52 Weeks Of Gratitude - Week 2

52 WEEKS OF GRATITUDE

WEEK TWO - SPOUSE/SIGNIFICANT OTHER

How to describe a husband....well my husband

We met in 1999, got married in 2000, 4 kids later and we are still happily married.....some say the only reason we are still married is because we don't see much of each other but honestly I think the main reason is that we trust each other when we are apart and we are always open and honest with each other, even if it means hurting the other occassionally.

I love him more than ever, he annoys me more than I ever thought would be possible but for some funny reason I want to spend every irritating moment with him.

When you fall in love don't fall in love with someone who says the right things, fall in love with someone who does the right things consistently. Don't look for the perfect person just look for someone who you can act silly with, someone who treats you well and most importantly someone who loves being with you more than anything

I'm extremely lucky that I have all of that in one guy...........and for all you single ladies out there "Don't give up hope - just stop looking and it will come when you least expect it"

Sunshine, Happiness and LOVE Always
